~Blessed Girl --One-- A little flashback. I've been noticing that holidays like Mother's Day and Father's Day take on more meaning than they have in the past. I don't think of myself getting older...I feel much younger than my 35 years. As hard as it is to realize I'm getting older, it's even harder to see my parents aging, having health problems, etc.... Anybody else out there experiencing this? --Two-- Our Stinky cat has grown up. He loves to be near us, and he has to have at least one paw firmly planted on us at all times. It's precious! We're so thankful we brought this little starving kitty home with us almost three years ago. To read more about his adventures click here. --Three-- Congratulations to my sweet Honey B. for GRADUATING with his M.Ed. in Learning and Technology a couple of weeks ago! I am so proud of your hard work and diligence in finishing while teaching full time and taking care of us! --Four-- We're loving the country life! Six months in our new home. Hearing the birds, crickets at night, and a porch. While our little apartment held many wonderful memories, the space we have now...the yard...nothing compares. I grew up in the country and am so glad to be back! --Five-- All of our little birdies have finally flown the coop. We had not one, not two, but three bird nests on our porch this year. We have determined that we are apparently living in the midst of a bird sanctuary. So thankful we were able to watch the process from start to finish, even to the point of seeing the fledglings learning to fly near the trees in our front yard! ~Blessed Girl I'm linking!
While being a teacher has been one of the hardest things I have ever done, it does have its advantages... One of those advantages being having the summer "off" (this just means I get to wake up later to start working). I also get to do one of my favorite things...cook. The picture on the left is my Blessed Girl Omelette, one of BG's favorites in the morning! Never having cooked an omelette before we got married this was a daunting task...but I have overcome my fears and now I can make a pretty darn good one! I'm going to let you in on my recipe and some of the little things I've come to learn to make this yellow bed of delightfulness. Rule #1: Preparation if key! Omelette's cook fast, so you need to have everything ready to go so you don't overcook it.
Now that you are prepped you can get cracking! Before I whisk my eggs I add about a tablespoon of cream to make the eggs fluffy. While your whisking you need to make sure your pan is warming up and your butter is melting. The pan needs to be good and hot before you pour the eggs in. When the butter is melted and bubbling it's time to pour the egg mixture in! Rule #2: Keep the pan moving! As soon as the eggs are poured in move your pan back and forth with the spatula doing the same thing in the eggs. Continue with this process for a few minutes as the eggs firm up! Make sure you do not break the edge. Your egg will resemble scrambled eggs but that's okay...it should look like that. After a couple of minutes and the edges are good and firm but the middle is still a wet is when you start adding your ingredients. Rule #3: Don't wait. When the cheese is slightly melted it's time to do some folding and take the omelette out. It is okay if the egg is still wet, it will continue to cook even out of the pan. With your spatula separate the edge of the egg from the pan and fold over a third of the egg. With you plate ready simply slide the omelette out of the pan and let it fold up as it falls! I like to use the letter fold instead of the taco fold. It lets all that good stuff stay on the inside and when you slice into it with your fork all the melty cheese will just ooze out... This little trick took me a few tries but once you get the hang of it it's like riding a bike! This is a wonderful breakfast item that my Blessed Girl loves and I love cooking for her! Enjoy!

While I so enjoyed my little space of the blogosphere, my sweet husband was a little left out! So...welcome to Simply At Home! We've decided that since we both love to write, we should create a family blog that we can BOTH contribute to (and keep a little more current). Why the new design? Well, we both have had an interest in healthy living for years. Don't get me wrong...we are not the most athletic, low-carb eating, sveltest people you've ever met! But, we try our best to find sales on healthy whole grains, organic dairy and meats, and as much local, organic produce as we can. After having had some recent thyroid/skin sensitivity issues, I also have developed a passion for keeping our home free of chemical laden products (cleaners, etc.). But, these changes we've made in our household have not been easy at times. Unfortunately, finding products that are truly "all natural" are few and far between. There's tons of false advertising and dishonest companies out there! You have to go to specialty stores to find these products and even then you have to do your homework to research if the claims on the labels are accurate and from reliable sources. For the past year or so, we've been shopping online for our household cleaning products as well as our body washes, shampoos, etc. Because let's face it, if you look up the ingredients on the cleaning products or the ingredients in cosmetic/personal care products carried in stores it's scary! Recently I was browsing for some new products and I came across a company called Celadon Road. We were totally impressed with the simplicity of their product ingredients and the many positive reviews we read from people who were using them.
